Caramel Puffcorn


Normal people would be posting healthy snacks and exercise tips for the New Year, but I'm over here indulging in all the sweet stuff. I can't help it! I've recently discovered some sweet treats that are too good to keep all to myself. So before you read on you might want to put on your running shoes so you can knock out the extra calorie in take that might follow!

 Caramel puffcorn is such a yummy treat perfect for party snacks and holiday. If you bring this to a party make sure to have plenty of recipe cards on hand, because everyone will want to know how you made this melt in your mouth treat. 



Ingredients:
2 bags of chester's puffcorn
1 cup brown sugar
1 cup butter (2 sticks)
1/2 cup light corn syrup
1 tsp baking soda




Place both bags of puffcorn into a large baking pan.


Combine the butter, corn syrup, and brown sugar in a medium sauce pan. Boil on medium low heat for two minutes. 


Add the baking soda and mix well and remove from heat. Be careful it will foam up quickly. 



Pour mixture over puffcorn. Place in a 250 preheated oven for 45 minutes stirring every 10-15 minutes.



Remove the caramel puffcorn from the oven and spread it out on wax paper to cool.





Warning this is a very addicting snack!
