Quick,Easy, and Crowd Pleasing Fajitas!



I've been seeing one of those cooking videos circulating Facebook where they make fajitas on a baking sheet and throw it in the oven. I figured I'd give it a try and guess what??? It was super juicy and delicious . I off course changed it up a bit but seriously it doesn't get any easier than this! This would be a great meal idea for a large crowd.

Strawberry Shortcake





I am a Jason's deli strawberry short cake addict. I CANNOT go eat at Jason's without ordering one... I just can't.
Strawberry shortcake is super simple to make and I'm not talking that store bought angel food cake with strawberry goo that gets smothered on top. I'm talking dense yellow cake layered with homemade whipping cream and fresh strawberries. 

Strawberries were on sale at the grocery store this evening so I thought what better excuse to indulge in a few extra calories this evening! 

My family LOVES strawberries so this dessert gets a 5 star recommendation from the littles. Did I mention its pretty cheap to make! Total cost is around $8 and feeds 8-10 people depending on serving size. 

Red Beans and Rice


Seriously nothing beats a good crock pot dinner! They are easy, tasteful, and hellooooo you're not slaving in the kitchen after a long tiring day. I mentioned the other day I've been really trying to come up with some new crock pot recipes. I tend to stick to my favorites and that gets a little boring for everyone.

I decided to try my hand in some good ole Cajun red beans and rice. I stumbled across 
Grand baby Cakes recipe and the pictures look irresistible. 

This recipe was easy to throw together (as long as you don't forget to let the beans soak over night)
It's jam packed with flavor and left everyone completely satisfied after a big bowl.

The only thing I did different was....

Pumpkin Spice Coffee Syrup


Call me crazy but I have made it personal goal to not drink Starbucks for 30 days..... ugh for someone like me who goes daily multiple times a day this will not be an easy task. My new mint Keurig has help the struggle but as pumpkin spice latte season draws closer and closer, I'll need a little extra reinforcements to keep me strong!

LOADED DOWN BBQ BAKED POTATOES


Back to school was this past week and I've been trying to come up with yummy crock pot recipes to keep us from eating out on our busy week nights. One of my families FAVORITE meals is my bbq pulled pork sandwiches which we make quite often. It has actually become a favorite amongst all my family and has been popping up at more and more family gatherings.  It's super easy , feeds large crowds, and is super yummy!!!! ( check the recipe out HERE).....but I tend to always have quite a bit left which never gets eaten. 

Well that was until today.......


Chocolate Chip Cookies



A good chocolate chip cookie recipe can compare to that little black dress every gal should have in her closet. Like a little black dress its simple, timeless, and irresistible. It's super easy and lets be honest not to many people can resist a soft buttery cookie with bits of mouth watering chocolate in every bite. 

Easy Crockpot Ribs

Everyone loves a good hardy meal after a long drooling day at the office but more times than not after you roll in from work and fight kids to do homework... making a home cooked meal from scratch doesn't rank very high on the priority list! This is why I love my crock pot and recipes like this one..... seriously makes life so much easier and tastier.

Homemade Toffee


Oh holy night!! I whipped up a batch of homemade toffee just a few minutes ago and I think I struck the gold mine! I'm not one for chocolate bars but give me a heath bar and I'm in heaven. When I stumbled on this recipe over at Lovely Morning I had to give it a shot. Not only was this a quick and easy recipe but it taste so gourmet. I almost had to pinch myself to make sure I wasn't in one of those fancy shmancy chocolate candy stores in the mall. As soon as the kids got wind that I had made "candy" they couldn't contain their snatchy little fingers. With that being said the only thing I would do differently is make a double batch!

Grandma's PTA Dessert

I'm finally uploading the famous PTA dessert!
 I spent most of the day yesterday cleaning house then happen to spot a gallon of white interior paint in the garage and had a "Look, squirrel!" moment. I ended up painting baseboards, window seals, doors, and my fire place. Needless to say bedtime came early last night.... but man what a difference fresh baseboards and doors make! Ok Ok on to the post....

My grandmother's PTA dessert has to be on my 10 favorite recipes growing up. My grandma Shirley was always in the kitchen whipping something yummy up. It was in her kitchen I developed my passion for cooking and love for creating dishes that pleased not only your appetite but your heart.  She has a picture hanging in her kitchen of me around the age of 5 or 6 all decked out in one of her aprons licking the spoon and bowl, like I did most often when I helped her in the kitchen. Maybe that's where the real love of cooking came from, the tasting part!!

This dessert has many names and quite honestly I'm not sure where the name PTA dessert came from. Some might argue the name but this yummy concoction will please any sweet tooth and that's undeniable!

Chili Cheese Dogs



With school around the corner I've  been  penny pinching to get ready for back to school shopping. This is a really affordable, filling, and delicious dinner. I forgot to mention EASY!!!! I'm all for easy these days. I laugh when I look back at the times I spent hours on dinner , I was determined to impress Jon with my five course meals. Lets be honest it's been 7 years and hes' not going anywhere anytime soon {I've already wooed his culinary heart} so I've simplified dinner time but its just as delicious as ever!

Sweet Potato Fries

A few weeks ago I had lunch at Mooyah's and came across the most amazing sweet potato fries. Unfortunately, I chose the safe route and ordered regular fries with my nice and greasy burger....but my husbands buddy did it alll right! I'm sure he was annoyed at me and Jon picking at his delightfully tasty sweet potato fries but we couldn't resist. I'm ashamed to say I was a fry snob up until that moment and I didn't think there was anyway sweet potato fries could come close to the normal french fry that I love.  I don't know maybe my household has been bitten by the sweet potato bug cause we can't get enough lately. So I set out to make my own version of Mooyah's yummy french fry alternative. I will say Mooyah's still has me beat but this is only my first attempt so they better watch out! My version might not stand up to Mooyah's just yet but they were still delish and the kids really enjoyed them.

Pina Colada Cheesecake

Who doesn't love a great cheesecake?! This dessert definitely had everyone talking at our Forth of July get together.... I was actually told this is now my new signature dish and a must at all future family get togethers! My pina colada cheesecake is rich in flavor and melts in your mouth with every bite.

Fajita Chicken Salad Sandwiches

Cinco De Mayo has come and gone leaving you with a huge headache {tequila tequila!!} or lots of left overs. Luckily for me I skipped out on the tequila this go around but I had lots of fajita chicken on my hands. I always feel extremely guilty throwing away perfectly good left overs. I tend to throw away more than I care to admit but I can't help the unappealing thoughts I have towards them.  I love chicken salad and have to say, in a very proud voice I might add, that this dish is dellllishhh and no one will have the slightest clue it was made from dreaded leftovers. This is a great spin on the classic and won't leave you disappointed. Not only is it yummy but super quick and simple which in my opinion makes it taste even better! 

EASY Slow Cooker Pulled Pork Sandwiches




 I love this meal! It's delicious, super simple, and the clean up is a breeze. You basically put it in the crock pot and forget about it! If your family is as busy as mine its nice to enjoy a home cooked meal without much effort. My family loves my pulled pork sandwiches and have no clue how simple it is! This is a fool proof recipe even the most novice cooks can master.





Caramel Puffcorn


Normal people would be posting healthy snacks and exercise tips for the New Year, but I'm over here indulging in all the sweet stuff. I can't help it! I've recently discovered some sweet treats that are too good to keep all to myself. So before you read on you might want to put on your running shoes so you can knock out the extra calorie in take that might follow!

 Caramel puffcorn is such a yummy treat perfect for party snacks and holiday. If you bring this to a party make sure to have plenty of recipe cards on hand, because everyone will want to know how you made this melt in your mouth treat. 



Ingredients:
2 bags of chester's puffcorn
1 cup brown sugar
1 cup butter (2 sticks)
1/2 cup light corn syrup
1 tsp baking soda

The Secret To A Big Red Float





There is nothing like a properly made big red float! I have to admit this is probably a weakness I'm not willing to give up....EVER! This is a super easy treat, one your kids would appreciate for sure!







They key to an amazing big red float is simple!Follow these 3 easy steps!

1# Always  make sure to serve your float in a glass cup! Don't ask me why but it just taste sooo much better. It's like enjoying a coke from the old glass bottles.

2# Make sure your big red is extra extra cold. You can do this by using a shaker or simply stirring the soda in a separate glass with lots of ice. Make sure your ice cubes don't slip in your float though. When the cold big red hits the cold ice cream it will crystallize..... this will create an unforgettable experience in your mouth!



#3 You HAVE to use Blue Bell homemade vanilla. I've tried using off brands and it really makes a big difference! Don't skimp!!!




There you have it a perfectly constructed big red float. My mouth is watering just thinking about it!Enjoy!!!

This is by far Jon's {the hubby's} favorite dessert. I have to admit its pretty delish ... and the longer it sits in the fridge the better it gets. This is perfect to throw together the night before a cookout...you'll be the talk of the party!

Fried Pork Chops W/ Jalapeno gravy!




My favorite restaurant at the moment ( well for the past year or more!) is Yo Steak house in Dallas!!! I discovered this magical culinary masterpiece on one of my visits to Market. For those of you who don't know what market is its a magical place too.... but that is a whole other blog post!... Market is an overwhelmingly large mall {its out of this world} for buyers/retail stores to meet wholesale vendors and browse their collections!

I believe it was my first time ever to market and my {step} Mom 
( I don't like that word but for the sake of confusion later, I though I might outta mention it) and I decided to make a weekend trip out of the whole thing. We stayed in the West End of Dallas and stumbled on this fabulous steakhouse!! When we arrived we ordered a cocktail{like most professional shoppers do after a long day of work } and browsed the unfamiliar menu. Oh my what was that.... a Food Network best steak review printed right there in front of me!! Now if your a foodie like me and at one point of time the tv did not move off of the Food Network... this little piece of sweet news made my heart leap! The Buffalo steak it would be!! Now I know what your thinking...eww buffalo! I'm not going to lie I was tiny bit nervous about my choice, but once that perfectly cooked piece of meat hit my taste buds, I knew this was going to be an ever lasting culinary relationship!

 I got a little side tracked... man am I hungry now lol!! Well anywho back to the chops... A few weeks ago I made another trip to market! It was time to freshen the store up and what better excuse to hit up the Yo! I decided to take a big risk and order something new ... which  can only be a super bad decision or super good decision...but when I read the words... fried pork chops with jalapeno gravy.... I knew it was destiny!! 

So to make a long story short that was the inspiration behind this recipe!! Now of course my chops don't measure up to Yo ....but it did turn out pretty yummy!!

Ingredients:
Pork chops ( used bone in)
buttermilk or milk
hot sauce
3 Cups All Purpose Flour
2 tsp garlic powder
2 tsp cayenne pepper
2 tsp pepper
2 tsp salt
canola oil

Gravy
1/4 cup of chopped pickled jalapenos (more or less depending on how spicy you like things)
Milk 
left over oil from pork chops 
1/4 cup flour 
salt and pepper to taste





Marinate your chops in buttermilk {or regular milk}
and add few squirts of hot sauce. I marinated over night but that's not necessary!


Combine your flour and seasonings.


Make sure the mixture is combined really well and all the seasonings are evenly mixed throughout. Put your frying pan on medium heat and fill about an inch of the pan with canola oil.


Now for the messy part!


coat your pork chops in the flour mixture making sure to pat the seasonings in the meat . Add back to the buttermilk marinade and back into the flour mixture. Give it a little shake and place on a plate and repeat until all the chops are double dipped in savory deliciousness. 



Drop in two or three chops at a time and let them brown on both sides. Don't over crowd the pan.



When each side is nice and brown, gently remove them to a paper towel to drain. Try not to rip off that golden brown crust that is packed with yummy flavor!! After they have drained transfer into a warm oven.

Now for the gravy!


Add the left over oil to your pan and heat to medium. 
I strained my oil and cleaned my pan before beginning the gravy.You don't have to do this but the excess flour from the pork chops can tend to burn by the time all the chops are finish cooking .


Add the jalapenos and saute for a few minutes. 



Next, slowly add your flour. You may not use the full 1/4 cup or you might need to add a little extra. You want to create a paste (roux) You don't want it overly dry and you don't want it too liquefied. 


The consistency should be bubbling nicely and when your run your spatula back in forth you can see the trail it leaves. If it resembles crumbles you've added to much flour...Don't panic just add some extra canola oil to thin it out a tad.

let the mixture cook until its nice and golden...not burnt! Keep an eye on it!


Whisk in the milk, I add enough milk to fill the pan about 1/2-3/4 way full. Continue to whisk until the gravy starts to thicken. Keep a close eye...gravy can tend to burn quickly if left unattended too long.



Once it coats the back of a spoon nicely you're done! If your gravy isn't thickening like it should, add a little cornstarch to about 1/4 cup water and add it to the pan .

{homemade} Hamburger Helper!


Hamburger helper is a life saver when its been a hectic day! Its super easy... Its cheap and only takes one pot.. and the kids love it.  Lately I've been trying to eat more natural foods and trying to cut out all the processed stuff... so I set out to make a homemade version of this yummy, easy, and pocket book friendly meal! 

Recipe:
1lb lean ground beef
1 medium onion
1/2 tsp Lawry's season salt
1/2 garlic powder
1/4 tsp pepper
1/4 tsp ground mustard
1/4 parsley
dash of paprika
1/2 12oz bag of dumpling noodles
1/4 of a 16oz package of Velveeta ... I think it was the 16 oz package... Its not the smallest and not the largest....lol ( I realize this is processed but I knew this would be creamier than cheddar cheese)
2cups milk
1cup warm water




Start by preheating a skillet to  medium high heat. While the pan is warming dice your onion up. 
When the pan has heated throw in the hamburger meat and the onion. Saute until the meat is cooked through and there is no signs of red meat.


When your meat is done drain it on a plate lined with paper towel. **I skipped this step cause I use extra lean ground beef and typically there is nothing to drain off**

Now add your milk, water, noodles, seasons, and Velveeta.( I chopped  my Velveeta block up into small cubes so it would melt easier)

Give it a good stir to combined the ingredients then plop a lid on it turn the heat down to medium and let it simmer.


Once it begins to boil turn the heat down to low and let the mixture thicken up. 

Then enjoy!!!

I served my HH with a lovely garden salad and green beans!
